THE BASIL GIN FIZZ
2 oz. (60 ml) London Dry Gin
¾ oz. (45 ml) lemon juice
½ oz. (30 ml) simple syrup
One egg white
A few sprigs of basil
Club soda
Dry shake the egg white in the shaker with no ice
Combine remaining ingredients except club soda in a shaker and gently muddle
Basil doesn’t need a lot of encouragement to bruise, and in point of fact, just shaking the drink alone would probably be sufficient
Shake with ice and strain into a tall Collins glass over fresh ice
Top with club soda
Garnish with a sprig of basil
Naturally this is the basil out of my garden
