I have scaled down this recipe for 3-5 servings, because the original makes like 7 liters, or 2 gallons. Punch in this time was basically like a house drink for everyone. So for this cocktail you will need:
11 oz (320 ml) Jamaican rum, or half and half Jamaican rum and Bacardi
I just used half Appleton Estate and half Bacardi
Rum cocktails really change depending on the style of rum you use
Water: 11 oz
5 oz (150 ml) Brandy or Cognac
3 oz (90 ml) Peach Brandy
Lime juice: 5 oz ≈ 150 ml
Sugar: 2 oz ≈ 55 g
Back in Baker’s day thy would dissolve the sugars in the spirits and then add a big block of ice for the water, but you could just add everything above at once and stir until the sugar dissolves. It will readily in that much liquid. Then pop it in the fridge. Alternatively, you could do something cool like add half the amount of cold water, then freeze the rest into like a bundt cake pan mold or something, embedded with cut citrus wheels, and then put it into the punch as guests arrive.
I can see this being a fun party punch nowadays. I will say, the old way was almost more responsible, because the punch started out strong and diluted over time with that big block of ice slowly melting.
Pour into a punchbowl and ladle out into an appropriately 19th Century punch glass, and enjoy.
I just wanna make a small point here, that since the booze measurements are pretty static, you could try this a whole bunch of ways depending on what you and your friends like. The ABV of the drink is about 17%.
