As we continue our Hot Bot Summer, this is a perfect hot afternoon sipping drink, because it’s FINALLY getting warm here! This is our 4th of July episode and I considered doing a red, white, and blue cocktail, but it’s very hard, especially if you want it to taste good and not just be hummingbird juice. So I went with an:
EASTSIDE RICKEY
· 2 oz. (60 ml) gin
· 1 oz. (30 ml) lime juice
· 1 oz. (30) simple syrup (1:1)
· 3 slices of cucumber
· 6-8 mint leaves
· Club soda
o Muddle cucumber and mint in a shaker
o Add liquid and ice
o Shake and strain over fresh ice in a tall glass
Fill with club soda
o Garnish with a sprig of mint and another slice of cucumber
