Since we’re steeped in the high holidays when this episode comes out, I decided to do my version of Mulled Wine for us today. We sort of did this back on Ep#197 around this time in 2022, but that one was Smoking Bishop, specifically Charles Dickens’ version, which is mentioned in A Christmas Carol, and the recipe was from his memoirs. The ancient Romans had a version they called Hippocras. But this is the way I make it.
MULLED WINE
1 bottle (750 ml) Bordeaux wine
1 cup (340 ml) apple brandy, Applejack, or cognac, if you prefer
These spices are to taste, so feel free to improvise
¼ tsp fresh grated ginger
¼ tsp fresh grated nutmeg
¼ tsp all-spice
2 cinnamon sticks
¼ cup (35 g) brown sugar
3 oranges
1 apple
1 lemon
1 lime
Whole cloves
Stud two of the oranges with 5-6 cloves each. Core the apple and pack with some brown sugar. Bake the studded oranges and apple at 350F (176C) for 60-90 minutes. Set aside until cool. Heat the remaining ingredients over low heat until simmering. Squeeze and add the juice of the cooked oranges. Slice the cooked apple, remaining orange, lemon, lime into thick rounds and add to wine.
Serve in a heat-tolerant glass and enjoy.
