YE OLDE GOSSIPE’S BOWLE, based on Mulled Ale, and dated England 1622
From the book Jigger, Beaker, and Glass, pg. 51:
“We, as a matter of principle, despise all titles with “Ye” in it—Ye Little Giftee Shoppee, and such ilk, but when we ran on the near-Elizabethan dating of this receipt we forgave all, for it is a grand title and one of England’s oldest drinks—sometimes called Lamb’s Wool. (NOTE: receipt is an old-timey synonym for “recipe”)
· 2 – 12 oz. (1 quart) strong ale bottles, Bass preferred
o Which, they do make still, but sporadically
· 2 cups (1 pint) good white wine
· 1 tsp nutmeg
· Brown sugar, to taste
o This is the problem with 100 year old version of a 400 year old recipes, they’re pretty vague
o I used 1 tsp
· Small apples, sugared, spiced, and roasted
o Again, super vague, because old recipe books assumed you just knew how to do things
§ Putting actual measurements in recipes is a fairly new invention
o Roasting apples is easy, but there are a deceptively long number of steps for me to go into here, so please just Google it
o Dealer’s choice on the recipe! Though the book does say, “Not too much sugar on the apples, please, Crabs are the best.” Meaning crabapples, to which I do not have access
· Mix ale and wine, add sugar and spice, heat slowly. When piping hot add roasted apples, serving in wide mugs, if you have ‘em.
This should definitely be consumed hot. Aaron and I both found out it does not age well. Also, probably know what kinda beer to use, because I made the wrong choice.
