o 3 jiggers cognac
o 2 jiggers Dubonnet (I’ll explain what that is in a moment)
o 2 dashes Angostura bitters
o 1 egg white
o Shake well with cracked ice and serve in a tall glass with a stem
DUBONNET IS:
A sweet, French aperitif made from fortified wine, herbs, and spices, including quinine, which is the interesting part
It was invented in 1846 as a more palatable way to consume quinine [kwai-nine] which fights malaria but is very bitter
Same reason tonic water exists (gin & tonic)
The Queen of England likes to start her day with a modified gin and Dubonnet with 2 shots Dubonnet and 1 shot dry London gin
